Sweet and Sour Fish

 Sweet and sour fish (A perfect preparation would be
 such that even the crispy fines and scales could be
 eaten like a prawn cracker)

 

 

 







Sweet and sour fish

Instead of using whole fish, you can also get the fish cutlets, and repeat steps 2 - 7. It is a favorite to most,
and  especially suitable for children and those who
do not like the bony nature of whole fish.

 
  Sweet and Sour Fish

   Ingredients

  • 600 g fish suitable for frying,

  • 3 tbsp corn flour to dredge with

  • Oil for deep frying

  • Tomato slices, green and red capsicum slices,
    as toppings

  • Shreds of red chilies, cucumber, cut onions,
    carrots and cilantro as toppings too.


    Sweet and sour sauce preparation
:

  • Rice wine/white wine (optional)

  • 1 tsp oil

  • 1 cup water

  • 1 tbsp corn flour

  • ˝ cup tomato sauce

  • 1 tbsp chili sauce

  • 2 tbsp lime juice or vinegar

  • 1 tbsp soy sauce

    Method  

 

 

 
  1. Make 2 slanting cuts across fish.

  2. Coat fish slightly with salt, dredge it with corn flour.

  3. Deep fry fish over high heat for 1 minute, then lower to medium heat till golden and crispy, takes about 5 minutes. Drain and dish out.

  4. Sauté garlic and ginger till fragrant.

  5. Add sweet and sour sauce; and  bring to boil.

  6. Pour over fish. Garnish and serve hot to enjoy the crisp of fish.

    Spicy fish in vinegar
    
     Method
  1. Slice fish with a few slanting cuts, without breaking the fish. Dredge slightly with salt.
  2. Deep fry fish till fragrant, about 5 minute.
  3. Fry chili paste till fragrant, add 1/2 cup of water and vinegar, bring to boil.
  4. Add fish, garnishing, sugar and soy sauce, simmer for 3 minutes.
  5. Serve hot with rice, or add noodle or rice vermicelli.
Ingredients:
  • mackerel fish of about 400 g
  • 250 ml vinegar
  • enough oil for deep frying
  • grind into paste: 10 red chilies, 10 green chilies, 5 shallots, 3 pips garlic,1 cm ginger
  • for garnishing: 1 red chili, 1 green chili, 2 big onions, cut
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1tsp lime juice
