Black pepper chicken
(Cook time: 4 minutes serve 5)
 

Ingredients

  • 2 tbsp corn oil
  • 20 g young ginger, shredded
  • 500 g chicken meat, sliced, mixed with
    1 tbsp
    corn flour to tenderize it
  • 1tbsp black pepper
  • 3 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 big onion, sliced
  • 1 green capsicum, sliced
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 red chili, sliced

Method

  1. Heat oil and stir fry ginger until fragrant.
  2.  Briskly stir fry chicken meat till golden yellow.
  3. Add in sliced vegetables and stir fry briskly.
  4. Add black pepper.
  5. Add soy sauce and sesame oil. Switch off the fire immediately.
  6. Serve hot with rice.
 

Grilled Curry Chicken
(cooking time 30 minutes)
Serve 6

Grilled curry chicken 

Ingredients
1 kg chicken drumsticks or chicken meat as desired.
                         
(A) Ground Spice

Others

  • 1 tbsp curry powder
  • 100 ml coconut milk from 1/2 coconut\
  • 1/2 tsp lime juice
  • soy sauce to taste
  • salt to taste

Method

  1. Chop chicken into pieces of desired sizes.

  2. Marinate the chicken pieces with (A), coconut milk,
    soy sauce and let stand for 1 - 2 hours.

  3. Add and mix with curry powder, lime juice and salt.

  4. Grill at 200 C till golden brown.

  5. Serve hot with rice or bread.



 

 
 

Dry Chicken Curry
(Cooking time 30 minutes serve 6)
Ingredients

  • 600 g chicken, chop into 10 pieces
  • 4 tbsp peanut oil
  • 2 potatoes, wedged
  • 1 cup thin coconut milk
  • 2 tbsp tamarind juice
  • salt and pepper to taste

(A) Pound finely the following

  Method
  1. Season chicken with salt and pepper. Let stand for 30 minutes.
  2. Heat oil. Fry ingredients (A) over
    medium heat till aromatic.
  3. Add chicken and potatoes. Continue to stir constantly till partially cooked, and the oil separates out.
  4. Add coconut milk and tamarind juice.
    Bring to boil.
  5. Reduce to low heat, and simmer till chicken and potatoes are cooked. If the potatoes soften earlier, dish them out earlier to
    prevent overcooking.
  6. Garnish this chicken dish and serve hot with rice, bread, or buns.
